The Pizzaiolo is the first domestic countertop oven to hit 750°F and cook an authentic wood fired style pizza in 2 minutes. Independently controlled sensors with electronic feedback systems enable the oven to deploy different temperatures to the top and bottom of the pizza.
The independently controlled, dynamic deck has been designed to sit directly above responsive incoloy heating elements. The natural cordierite stone is heated quickly and evenly to maintain the correct temperature, cooking the pizza base to the desired finish, with the right amount of char for the classic wood fired finish.

Intense radiant heat is evenly controlled by Breville's patent pending heating elements so you no longer need to rotate food while cooking. Heat intensifying parabolic reflectors maximise the efficiency of the top heating elements by reflecting the energy onto the crust. Integrated deck to door design moves the pizza closer to the elements and makes it easy to load and unload.

For wood fired and Neapolitan style pizzas, the optimised deflector shield has been designed to protect your fragile toppings from intense heat while reflecting radiant heat towards the crust to achieve the leopard spotted effect. For other pizza styles, inner element dynamic switching ensures that toppings, cheese and dough are evenly browned.

The Pizzaiolo comes with a range of preset cooking functions including the authentic "Wood Fired", iconic New York, deep and delicious Pan pizza, bar style Thin & Crispy and even Frozen pizza setting. Fully customize how the oven functions. Manual Mode allows you to individually control deck and top temperatures and to select which heating elements are in operation. Choose the ideal heat: select Crust Only to achieve leopard spotting on a Neapolitan style pizza or Even Heat for other styles where toppings, cheese and dough are evenly browned.

The combination of double-pane heat resistant front window and multi-material insulation surrounding the heat chamber ensures the extreme temperatures remain inside the oven cavity while keeping the outside surfaces as cool as possible.

Do I need to do anything before using the pizza oven for the first time?
Yes. Before cooking, run the empty oven for 20 minutes to burn off any protective substances from the heating elements. Make sure the oven is in a well-ventilated area, as it may produce some vapour during this process.
Before the first use, remove all packaging, wipe the stone deck with a damp cloth and dry it thoroughly, then wipe the inside of the oven with a soft, damp sponge. Place the oven on a flat, dry surface with at least 10 cm (4") of clearance on the sides and 15 cm (6") above the oven.
How do I prepare the oven for cooking?
Insert the stone deck into the oven, plug the oven into a grounded power outlet, and turn the STYLE dial to your desired setting. The oven will begin preheating automatically.
How do I know when the oven is preheated?
The AT TEMPERATURE light will flash while the oven is preheating. Once the oven reaches the selected temperature, the light will turn solid.
Preheating typically takes 10–20 minutes, depending on the temperature setting.
How do I use the pizza peel?
Use the pizza peel to place the pizza directly onto the stone deck. Do not use the peel while the pizza is cooking.
What happens when the cooking cycle is finished?
At the end of the cooking cycle, the oven will sound an alert and the TIME dial lights will flash before turning off. You can then carefully remove your pizza and enjoy.
Can I use the oven straight out of the box?
The oven should be prepared before its first cooking use. Follow the initial cleaning steps and run the empty oven for 20 minutes in a well-ventilated area. Once this is complete, the oven is ready to use.
